The Chicago Chef Working to Change America’s Prisons

beansFoodandwine.com has a story on how a Chicago chef, Matthias Merges, works with a Chicago prison to have inmate-run vegetable garden to supply produce to local homeless shelters. It all started 10 years ago and now they are supplying more than nine thousand pounds of produce each year.
